You can disable this feature by opt-out of Google Audio Tracking, you can find this option in your google account setting then go to manage accounts, choose data and personalization here you will need to unmark "Include Audio and Video Recording"
I know you are asking yourself when did I allow the opt-in option? so remember this will always mark by default you need to unmark it later otherwise Google Listen to your conversation without saying a single Wake Word-like: hey google to Google Assitant app.
